Tasting Notes
This fresh and vibrant cocktail combines sweet peach puree with earthy thyme and sparkling prosecco. The peach notes hit first, offering a bright, fruity sweetness that feels natural rather than sugary.
The thyme adds subtle herbal complexity without taking over. Its gentle aromatics complement the peach while adding depth to each sip.
Prosecco brings effervescence and a light acidic touch that balances the fruit. The bubbles create a refreshing texture and help distribute the flavors across the palate.
Aroma Profile:
- Fresh peach and stone fruit
- Garden herbs
- Light citrus notes
- Gentle yeast from prosecco
Flavor Balance:
- Sweetness: Medium
- Acidity: Medium-low
- Body: Light
- Alcohol: 8-10% ABV
The finish is clean and bright, with lingering peach essence and a whisper of thyme. This drink stays light and refreshing from start to finish.
Perfect for warm weather gatherings, this cocktail pairs well with light appetizers and brunch dishes. The gentle sweetness and herbal notes make it especially good with fresh cheeses and fruit-based desserts.
Substitute
The classic Bellini uses peach puree. But, canned peaches work well in a pinch. Frozen peaches are another good option when fresh ones aren’t in season.
For a non-alcoholic version, skip the prosecco. Then, use sparkling water or sparkling cider instead. The drink keeps its fizzy fun without the alcohol.
If thyme isn’t available, rosemary or basil can add a nice herbal note. Mint also pairs well with peaches for a fresh twist.
Can’t find prosecco? Other sparkling wines work too:
- Champagne
- Cava
- Sparkling wine
- Any dry bubbly wine
White peaches can replace yellow peaches. They have a milder, sweeter taste that some people prefer. Nectarines make a tasty swap too – they’re basically fuzz-free peaches.
For extra sweetness without adding sugar, try a splash of peach nectar or peach juice. This works especially well with tart or underripe peaches.
