Ingredients
- 2 ripe kiwis peeled and sliced
- 1 to 2 limes about 2 tablespoons fresh lime juice
- 1 –2 tablespoons simple syrup or sugar to taste
- 1 bottle 750 mL chilled prosecco
- Lime slices or kiwi wheels for garnish
- Fresh mint leaves optional, for garnish
- Ice cubes optional
Instructions
- Peel and slice the kiwis, then place them in a pitcher or large mixing glass.
- Add fresh lime juice and your desired amount of simple syrup or sugar.
- Use a muddler or fork to mash the kiwis with the lime juice and syrup until pulpy.
- If a smoother drink is preferred, strain the kiwi-lime mixture through a fine mesh strainer to remove seeds and pulp.
- Pour the chilled prosecco slowly into the pitcher with the fruit mixture.
- Stir gently to combine.
- Add ice cubes if serving immediately.
- Pour the cocktail into glasses and garnish with a lime slice, kiwi wheel, or mint leaves.
- Serve right away—don’t let those bubbles fade!
