Kiwi and Lime Prosecco Cocktail Recipe

Equipment

  • Small sharp knife for peeling and slicing kiwis
  • Cutting Board
  • Citrus juicer for limes
  • Muddler or fork to mash fruit
  • Fine mesh strainer (optional, if you want a smoother texture)
  • Pitcher or large mixing glass
  • Stirring spoon
  • Measuring jigger or tablespoon
  • Champagne flutes or wine glasses for serving

Ingredients

  • 2 ripe kiwis peeled and sliced
  • 1 to 2 limes about 2 tablespoons fresh lime juice
  • 1 –2 tablespoons simple syrup or sugar to taste
  • 1 bottle 750 mL chilled prosecco
  • Lime slices or kiwi wheels for garnish
  • Fresh mint leaves optional, for garnish
  • Ice cubes optional

Instructions

  • Peel and slice the kiwis, then place them in a pitcher or large mixing glass.
  • Add fresh lime juice and your desired amount of simple syrup or sugar.
  • Use a muddler or fork to mash the kiwis with the lime juice and syrup until pulpy.
  • If a smoother drink is preferred, strain the kiwi-lime mixture through a fine mesh strainer to remove seeds and pulp.
  • Pour the chilled prosecco slowly into the pitcher with the fruit mixture.
  • Stir gently to combine.
  • Add ice cubes if serving immediately.
  • Pour the cocktail into glasses and garnish with a lime slice, kiwi wheel, or mint leaves.
  • Serve right away—don’t let those bubbles fade!

Notes

I find that using very ripe kiwis makes the cocktail sweeter and easier to mash.
If I don't have simple syrup, I mix a bit of sugar with the lime juice first to help it dissolve.
Straining the fruit mixture is optional; leaving it in gives more texture, which I personally like.
The lime amount can be adjusted depending on how tart I want the drink.
Chilling the prosecco beforehand is important for the best fizz.
This recipe should be served right after mixing to keep the bubbles sharp.
