For each cocktail:

6-8 fresh blueberries
4-6 fresh raspberries or strawberries
1½ oz white rum
½ oz simple syrup
½ oz fresh lemon juice
Club soda
Ice cubes
Mint sprigs for garnish
Extra berries for garnish

Instructions

Add blueberries to the bottom of your cocktail shaker and muddle gently.

Add ice, white rum, simple syrup, and lemon juice to the shaker.
Shake vigorously for 15-20 seconds until well chilled.
Strain the mixture into a highball glass filled with ice. Leave some space at the top for the club soda.

In a separate glass, muddle the raspberries or strawberries.
Carefully pour the red berry mixture over the back of a spoon to float on top of the blue layer.
Top with club soda for fizz and bubbles.

Garnish with fresh mint and extra berries on a cocktail pick.

Notes
