Equipment

  • Cocktail shaker
  • Muddler
  • Jigger or measuring cups
  • Highball glasses (12 oz)
  • Strainer
  • Bar spoon
  • Ice bucket
  • Small knife and cutting board

Ingredients

For each cocktail:

  • 6-8 fresh blueberries
  • 4-6 fresh raspberries or strawberries
  • oz white rum
  • ½ oz simple syrup
  • ½ oz fresh lemon juice
  • Club soda
  • Ice cubes
  • Mint sprigs for garnish
  • Extra berries for garnish

Instructions

  • Add blueberries to the bottom of your cocktail shaker and muddle gently.
  • Add ice, white rum, simple syrup, and lemon juice to the shaker.
  • Shake vigorously for 15-20 seconds until well chilled.
  • Strain the mixture into a highball glass filled with ice. Leave some space at the top for the club soda.
  • In a separate glass, muddle the raspberries or strawberries.
  • Carefully pour the red berry mixture over the back of a spoon to float on top of the blue layer.
  • Top with club soda for fizz and bubbles.
  • Garnish with fresh mint and extra berries on a cocktail pick.

Notes

This cocktail can be made non-alcoholic by substituting the rum with lemon-lime soda or white grape juice. For a stronger berry flavor, let the muddled fruit sit in the rum for 10-15 minutes before mixing.
For larger parties, prepare the blue and red mixtures separately in pitchers. Keep chilled until serving, then build individual cocktails as needed.
The drink is best enjoyed immediately while the fizz is active. The layered effect works best when pouring slowly over ice.
If the berries aren't sweet enough, adjust the simple syrup amount to taste. No shame in making it a little sweeter if that's your thing.
