I always use a ripe pear because it gives more flavor and sweetness to the drink. If I want a stronger herb taste, I use thyme simple syrup instead of plain syrup.
To make thyme syrup, simmer equal parts sugar and water with fresh thyme for about 5 minutes, then cool and strain. This recipe can be made non-alcoholic by leaving out the gin or vodka and adding a little more pear juice or soda.
For the best fizz, I pour the soda slowly on the side of the glass. I don’t stir too much after adding soda to keep the bubbles.
