I bring together fresh pear, fragrant thyme, and sparkling fizz for a refreshing and bright cocktail. This recipe uses simple tools and ingredients, so it’s easy to prepare at home.
Small saucepan (if making fresh thyme simple syrup)
Ingredients
1ripe pearpeeled, cored, and chopped
2–3 sprigs fresh thyme
1.5oz45 ml gin or vodka
1oz30 ml pear juice (bottled or freshly pressed)
0.5oz15 ml simple syrup (or thyme simple syrup)
0.5oz15 ml fresh lemon juice
3–4 oz90–120 ml club soda or sparkling water
Ice cubes
Optional: Extra thyme sprigs and pear slices for garnish
Instructions
Muddle chopped pear and thyme sprigs well in the shaker to release flavors.
Add gin or vodka, pear juice, simple syrup, and lemon juice.
Fill shaker with ice and shake firmly for 10–15 seconds.
Strain mixture into a tall glass filled with fresh ice.
Top with club soda or sparkling water.
Stir gently with a bar spoon to mix fizz through the drink.
Garnish with a fresh thyme sprig or a slice of pear.
Notes
I always use a ripe pear because it gives more flavor and sweetness to the drink. If I want a stronger herb taste, I use thyme simple syrup instead of plain syrup.To make thyme syrup, simmer equal parts sugar and water with fresh thyme for about 5 minutes, then cool and strain. This recipe can be made non-alcoholic by leaving out the gin or vodka and adding a little more pear juice or soda.For the best fizz, I pour the soda slowly on the side of the glass. I don’t stir too much after adding soda to keep the bubbles.Using fresh lemon juice gives a brighter taste than bottled juice.
