Ingredients

- 1.5 oz vodka
- Ice cubes
- Club soda to top about 2 oz
- Lemon wheel or carrot ribbon for garnish
- Fresh mint sprig for garnish
Instructions
- Peel and chop carrots, then juice them or blend with water and strain to get 2 oz of juice.
- Juice half a lemon to get 1 oz juice.
- Add carrot juice, lemon juice, ginger simple syrup, and vodka (if using) to the shaker.
- Fill shaker with ice, cover, and shake well for 15 seconds.
- Strain the mixture into a highball glass filled with ice.
- Top with club soda and gently stir.
- Garnish with a lemon wheel, a carrot ribbon, and a mint sprig.
- Serve immediately while cold.
