Carrot Ginger Refresher Cocktail Recipe

This drink mixes fresh carrot juice, spicy ginger, and a touch of sweetness for a balanced, vibrant flavor. I like how simple it is to make—just a handful of easy-to-find ingredients and a few tools.

Equipment

  • Juicer or fine mesh strainer (for carrot juice)
  • Cocktail shaker with lid
  • Jigger or measuring spoon
  • Citrus juicer or reamer
  • Fine mesh strainer (for shaking out pulp)
  • Sharp knife and cutting board
  • Highball glass (or any tall glass)
  • Spoon: For stirring.
  • Ice cubes

Ingredients

  • 2 oz fresh carrot juice about 2 large carrots
  • 1 oz freshly squeezed lemon juice about 1/2 lemon
  • 1 oz ginger simple syrup see notes
  • 1.5 oz vodka
  • Ice cubes
  • Club soda to top about 2 oz
  • Lemon wheel or carrot ribbon for garnish
  • Fresh mint sprig for garnish

Instructions

  • Peel and chop carrots, then juice them or blend with water and strain to get 2 oz of juice.
  • Juice half a lemon to get 1 oz juice.
  • Add carrot juice, lemon juice, ginger simple syrup, and vodka (if using) to the shaker.
  • Fill shaker with ice, cover, and shake well for 15 seconds.
  • Strain the mixture into a highball glass filled with ice.
  • Top with club soda and gently stir.
  • Garnish with a lemon wheel, a carrot ribbon, and a mint sprig.
  • Serve immediately while cold.

Notes

For ginger simple syrup, I use equal parts sugar, water, and fresh ginger. Simmer 1/2 cup water and 1/2 cup sugar with a 3-inch piece of peeled, sliced ginger for 10 minutes.
Let it cool and strain before using. You can skip the vodka for a mocktail.
If you want extra spice, toss a thin slice of ginger into the shaker. Use fresh carrot juice for the best color and flavor.
Bottled carrot juice can work, but honestly, it’s usually less vibrant. Store ginger syrup in the fridge for up to 2 weeks.
Always serve the cocktail over plenty of ice for the most refreshing taste.
