Equipment

  • Blender
  • Fine-mesh strainer
  • Muddler or wooden spoon
  • Pitcher
  • Ice cube tray
  • Glasses for serving

Ingredients

Here's what you'll need to make 4 servings:

  • 4 cups cubed seedless watermelon
  • 1/4 cup fresh lime juice
  • 2 tablespoons honey
  • 4 sprigs fresh rosemary
  • 2 cups sparkling water
  • Ice cubes
  • Watermelon wedges and rosemary sprigs for garnish

Choose a ripe, sweet watermelon for the best flavor. Fresh lime juice adds a tangy kick.

Instructions

Follow these steps to make the mocktail:

  • Blend watermelon cubes until smooth.
  • Strain the puree into a pitcher.
  • Add lime juice and honey. Stir well.
  • Muddle 2 rosemary sprigs in a glass.
  • Fill glasses with ice.
  • Pour watermelon mixture over ice, filling glasses 3/4 full.
  • Top with sparkling water.
  • Garnish with watermelon wedges and fresh rosemary.
  • Stir gently and serve right away.

Blend the watermelon in batches if needed. Taste and adjust sweetness with more honey if desired.

    Notes

This mocktail is best served fresh. You can make the watermelon base ahead of time and chill it.
Add sparkling water just before serving to keep the fizz.
For a smoother drink, strain the watermelon puree twice.
To make it sweeter, use riper watermelon or add more honey.
For a stronger rosemary flavor, let the muddled sprigs sit in the drink longer.
Try different herbs like mint or basil instead of rosemary. You can also swap lime juice for lemon juice.
For a frozen version, blend the watermelon mixture with ice until slushy.
