I make this Watermelon Mint Cooler when I want a refreshing summer drink that blends sweet, fruity flavors with a touch of fresh mint. The recipe is easy to follow and doesn’t need any complicated tools.

Equipment

  • I use a blender to mix the watermelon and create a smooth juice. For straining, I always keep a fine mesh strainer or cheesecloth nearby to remove any pulp or seeds.
  • A muddler helps me press the mint leaves gently to release their oils. If I don’t have one, I just use the back of a spoon.
  • A cocktail shaker or even a large jar with a lid makes it easier to mix everything with ice. For measuring, I prefer a jigger or just simple measuring spoons and cups.
  • I serve this drink over ice in highball or Collins glasses. A long bar spoon is handy to stir.
  • Finally, I always set aside a cutting board and a sharp knife for cutting the watermelon and lime. Clean, simple tools keep the process fast and honestly, more enjoyable.

Ingredients

I use these items to make one to two servings:

  • 2 cups fresh watermelon cubed and chilled
  • 6-8 fresh mint leaves plus extra for garnish
  • 1 tablespoon simple syrup adjust to taste
  • 1 ounce fresh lime juice squeezed from 1 lime
  • 2 ounces white rum optional for a non-alcoholic version
  • 1/2 cup club soda or sparkling water adjust for fizz
  • Ice cubes

For serving, I sometimes add a lime wheel or extra watermelon slice as a garnish. I always choose seedless watermelon to make prep easier and avoid bitterness.

Instructions

  • I start by placing the cubed watermelon in a blender and blending until smooth. Then, I use the strainer to pour the juice into a pitcher or bowl, pressing gently to leave seeds and pulp behind.
  • With the mint leaves, I place them in the bottom of a shaker or large jar and gently muddle. I add the watermelon juice, lime juice, simple syrup, and rum.
  • After putting in a handful of ice, I shake the mixture well for about 10-15 seconds. I strain the mixed drink into glasses filled with ice.
  • After that, I top each glass with club soda and stir gently. I finish by adding a mint sprig or a small watermelon wedge as a garnish.

Notes

For extra flavor, I use very ripe watermelon and fresh mint only. If I want the drink less sweet, I just reduce or skip the simple syrup.
I can adjust the club soda amount for a lighter or stronger taste. The cocktail can be made ahead, minus the club soda, and stored in the fridge for up to a day.
I add soda and ice only when ready to serve, so the drink stays fizzy. Sometimes I replace the rum with vodka, or just leave out the spirits for a non-alcoholic version.
I avoid over-muddling the mint so the drink stays fresh and not bitter. Seedless watermelon is best to keep things smooth and simple.
