- 2 cups fresh watermelon cubed and chilled

- 1 ounce fresh lime juice squeezed from 1 lime
- 2 ounces white rum optional for a non-alcoholic version
- 1/2 cup club soda or sparkling water adjust for fizz

Instructions

- With the mint leaves, I place them in the bottom of a shaker or large jar and gently muddle. I add the watermelon juice, lime juice, simple syrup, and rum.
- After putting in a handful of ice, I shake the mixture well for about 10-15 seconds. I strain the mixed drink into glasses filled with ice.
- After that, I top each glass with club soda and stir gently. I finish by adding a mint sprig or a small watermelon wedge as a garnish.
