Ingredients

For one cocktail:

  • 1 ripe pear peeled and chopped (Bartlett or Anjou work well)
  • oz vanilla vodka
  • ½ oz fresh lemon juice
  • ½ oz simple syrup
  • 2-3 oz champagne or prosecco
  • Ice cubes
  • Thin pear slice for garnish

Choose a ripe, fragrant pear for the best flavor. If you don't have vanilla vodka, use regular vodka and add ¼ teaspoon pure vanilla extract.

Instructions

  • Peel and chop one ripe pear. Remove the core and seeds.
  • Put the pear pieces in a cocktail shaker and muddle until mashed.
  • Add vanilla vodka, lemon juice, simple syrup, and ice to the shaker.
  • Shake for 15-20 seconds until chilled.
  • Strain the mixture through a fine mesh strainer into a champagne flute or tall glass.
  • Top with champagne or prosecco and stir gently.
  • Garnish with a thin slice of pear on the rim.
  • Serve while the drink is cold and bubbly.

Notes

Make and serve this cocktail fresh to keep the bubbles. For a non-alcoholic version, use alcohol-free vanilla syrup instead of vodka and replace champagne with ginger ale or sparkling water.
You can double or triple the recipe for parties. Prepare the pear mixture ahead and store it in the refrigerator for up to 4 hours, then add champagne just before serving.
For extra vanilla flavor, use vanilla bean-infused simple syrup. Split a vanilla bean and simmer it in the syrup as it cools.
