Ingredients

  • 4 oz fresh pineapple juice
  • 2 oz fresh lemon juice
  • 2 oz simple syrup
  • 4-6 oz club soda
  • Ice cubes
  • Fresh pineapple wedges for garnish
  • Maraschino cherries for garnish

Instructions

  • Fill the cocktail shaker halfway with ice cubes.
  • Add pineapple juice, lemon juice, and simple syrup to the shaker.
  • Shake vigorously for 10-15 seconds until well chilled.
  • Fill two Collins glasses with fresh ice cubes.
  • Strain the mixture evenly into the glasses.
  • Top each glass with 2-3 oz club soda.
  • Stir gently with a long spoon to combine.

Notes

Fresh pineapple juice makes a big difference in taste compared to canned versions. Store any leftover drink mixture without club soda in the fridge for up to 2 days.
The simple syrup can be adjusted based on sweetness preference. Start with less and add more to taste.
For extra flair, freeze small pineapple chunks to use as ice cubes. They won't water down the drink and add more flavor as they melt.
