  • Strainer
  • Tall glass (12-16 oz)
  • Jigger or measuring tool
  • Ice cube tray
  • Citrus juicer
  • Long spoon for stirring.

Ingredients

  • 2 oz coconut cream
  • 1 oz fresh lime juice
  • 1 oz pineapple juice
  • 4 oz club soda
  • Ice cubes
  • 1 lime wheel for garnish
  • 1 pineapple wedge for garnish
  • 1 maraschino cherry optional

Instructions

  • Fill the cocktail shaker halfway with ice cubes.
  • Add coconut cream, lime juice, and pineapple juice to the shaker.
  • Shake vigorously for 15-20 seconds until well chilled.
  • Fill a tall glass with fresh ice cubes.
  • Strain the mixture into the glass.
  • Top with club soda and stir gently.
  • Garnish with lime wheel, pineapple wedge, and cherry if desired.

Notes

Store coconut cream in the fridge after opening. It will stay fresh for up to 1 week.
Fresh juices make the best cocktails. Skip bottled versions when possible.
The drink can be made non-alcoholic by using coconut milk instead of cream.
