Add strawberries to the shaker and muddle until juicy.
Pour in pink gin, lemon juice, simple syrup, and egg white.
Dry shake (no ice) for about 15 seconds for foam.
Add ice and shake again until well chilled.
Double strain into a chilled coupe or rocks glass.
Drop a few dashes of bitters on top, if using. Garnish with a strawberry slice or lemon twist.
Notes
Use pink gin for floral notes, berry gin for more fruitiness. Always use fresh lemon juice for best taste. Adjust syrup for desired sweetness. Bitters add aromatic contrast to the foam.
