Ingredients

  • 1 cup fresh strawberries hulled
  • 1 ripe peach peeled and sliced
  • 1 tbsp sugar or honey (optional)
  • 1 tsp lemon juice
  • 1 bottle chilled prosecco
  • ice cubes optional, for blending

Instructions

  • Blend the strawberries and peach slices until smooth.
  • Add lemon juice and sugar or honey, then blend again.
  • Strain the puree with a fine mesh strainer to remove seeds and pulp.
  • Spoon about 2 tablespoons of puree into each champagne flute.
  • Slowly pour chilled prosecco on top, holding the glass at an angle to keep foam down.
  • Stir gently with a spoon to mix flavors, but keep the bubbles.
  • Serve right away while cold and fizzy.

Notes

Adjust sugar to taste, or skip it if fruit is very ripe. Serve immediately for best bubbles. Frozen strawberries make a thicker Bellini. Chilling the glass helps keep it refreshing.
