This light and fruity Bellini blends sweet strawberry and mellow peach puree with bubbly prosecco for a fresh, festive drink. Perfect for brunch, celebrations, or any warm afternoon you want something easy and crowd-pleasing.
Blend the strawberries and peach slices until smooth.
Add lemon juice and sugar or honey, then blend again.
Strain the puree with a fine mesh strainer to remove seeds and pulp.
Spoon about 2 tablespoons of puree into each champagne flute.
Slowly pour chilled prosecco on top, holding the glass at an angle to keep foam down.
Stir gently with a spoon to mix flavors, but keep the bubbles.
Serve right away while cold and fizzy.
