Instructions
Combine sugar, water, and chopped lemongrass in a saucepan. Heat until sugar dissolves. Let cool, then strain out lemongrass to make syrup.
Muddle fresh strawberries in a tall glass until juicy.
Pour in lemon juice and 1 tablespoon of cooled lemongrass syrup. Stir gently.
Add ice to fill the glass.
Top with club soda or sparkling water and stir with a bar spoon.
Garnish with a strawberry slice or lemon wedge.
