  • Bar spoon

Ingredients

  • 4-5 fresh strawberries plus extra slices for garnish
  • 1 stalk lemongrass trimmed and cut
  • 0.5 cup sugar for lemongrass syrup
  • 0.5 cup water for lemongrass syrup
  • 2 tablespoons lemon juice freshly squeezed
  • 1 tablespoon lemongrass syrup from above
  • ice cubes as needed
  • club soda or sparkling water to top off
  • strawberry slice or lemon wedge for garnish

Instructions

  • Combine sugar, water, and chopped lemongrass in a saucepan. Heat until sugar dissolves. Let cool, then strain out lemongrass to make syrup.
  • Muddle fresh strawberries in a tall glass until juicy.
  • Pour in lemon juice and 1 tablespoon of cooled lemongrass syrup. Stir gently.
  • Add ice to fill the glass.
  • Top with club soda or sparkling water and stir with a bar spoon.
  • Garnish with a strawberry slice or lemon wedge.

Notes

Adjust syrup to your sweetness preference. For a stronger lemongrass note, simmer syrup longer. Use frozen strawberry slices as ice for extra fruit flavor. This recipe is easy to multiply for groups—extra syrup keeps well in the fridge.
