Equipment

  • Cocktail shaker
  • Muddler
  • Jigger or measuring cup
  • Cocktail glasses
  • Strainer
  • Bar spoon
  • Knife and cutting board

Ingredients

For two servings, gather:

  • 4 oz white rum
  • 2 oz fresh pineapple juice
  • 1 oz fresh lime juice
  • 1 oz simple syrup
  • 8-10 fresh sage leaves
  • 2 lime wedges
  • 2 cups crushed ice
  • Club soda for topping
  • Pineapple wedges and sage sprigs for garnish

Use fresh pineapple juice for the best flavor. You can make simple syrup by heating equal parts sugar and water until dissolved.

Instructions

  • Add sage leaves and lime wedges to the shaker. Muddle gently to release oils.
  • Pour in rum, pineapple juice, lime juice, and simple syrup.
  • Fill shaker with ice and shake for 10-15 seconds.
  • Fill two glasses with crushed ice.
  • Strain the mixture over the ice.
  • Top each glass with a splash of club soda.
  • Stir gently to combine.
  • Garnish with pineapple wedges and sage sprigs.
  • Serve right away while cold and bubbly.

The crushed ice helps keep the drink chilled as you sip.

    Notes

You can adjust the sweetness by adding more or less simple syrup. For a non-alcoholic version, replace the rum with extra pineapple juice and club soda.
Try grilling pineapple chunks before juicing for a smoky twist. You can make a big batch for parties by multiplying the recipe. Just wait to add ice and club soda until serving.
Store extra pineapple juice in the fridge for up to 3 days. Use within a week for the freshest taste.
