Ingredients

  • 2 oz 60ml fresh-squeezed lemon juice (about 2 medium lemons)
  • 1 oz 30ml rosemary simple syrup
  • 4 oz 120ml sparkling water or club soda
  • 1-2 sprigs fresh rosemary
  • Ice cubes
  • Lemon slices for garnish

For rosemary simple syrup:

  • 1 cup water
  • 1 cup granulated sugar
  • 3-4 large sprigs fresh rosemary

The quality of ingredients matters greatly. Use freshly squeezed lemon juice rather than bottled for the best flavor profile. Fresh rosemary adds an aromatic quality that dried herbs cannot match.

Instructions

Make rosemary simple syrup:

  • Combine water and sugar in a small saucepan
  • Bring to a gentle boil, stirring until sugar dissolves
  • Add rosemary sprigs, remove from heat, and let steep for 20-30 minutes
  • Strain into a clean jar and refrigerate until cool

Prepare the mocktail:

  • Take one rosemary sprig and gently muddle it in the bottom of your glass
  • Fill the glass halfway with ice cubes
  • Pour lemon juice and rosemary simple syrup over ice
  • Top with sparkling water and stir gently

Garnish and serve:

  • Add a fresh rosemary sprig and lemon slice
  • Serve immediately while bubbles are still active

The mocktail should look pale yellow with a slight green tint from the rosemary oils.

    Notes

    This recipe can be easily doubled or tripled for gatherings. The rosemary simple syrup keeps well in the refrigerator for up to two weeks in an airtight container.
    For a stronger rosemary flavor, lightly bruise the garnish sprig before adding it to release more essential oils. The drink can be made less sweet by reducing the simple syrup to ½ oz.
