Ingredients

  • 6 cups water divided
  • 4 black tea bags or 2 tablespoons loose leaf tea

  • ½ cup fresh lemon juice about 4 medium lemons

The quality of ingredients matters in this recipe. Use freshly squeezed lemon juice rather than bottled for the best flavor. Fresh rosemary provides more aroma than dried.

Instructions

  • Prepare the tea base: Bring 4 cups of water to a boil. Remove from heat.
  • Steep the tea: Add tea bags and 2 rosemary sprigs to the hot water. Let steep for 5-7 minutes, then remove tea bags (leave rosemary in).
  • Cool the mixture: Add 2 more cups of cold water and allow the tea to cool to room temperature, about 30 minutes.
  • Remove rosemary: Strain the tea to remove the rosemary sprigs.
  • Add sweetener: Stir in honey or simple syrup until completely dissolved.
  • Add lemon juice: Mix in the fresh lemon juice.
  • Muddle fresh herbs: In a pitcher, lightly muddle 1-2 fresh rosemary sprigs to release oils.
  • Combine and chill: Pour the tea mixture into the pitcher over the muddled herbs. Refrigerate for at least 2 hours.
  • Serve: Fill glasses with ice, add tea mixture, and garnish with lemon slices and fresh rosemary sprigs.

Notes

This mocktail can be prepared up to 3 days in advance and stored in the refrigerator. The flavor actually improves after 24 hours as the rosemary continues to infuse.
For a stronger rosemary flavor, add an extra sprig during the initial steeping or create rosemary simple syrup instead of plain.
Make it fizzy by adding sparkling water just before serving. A 3:1 ratio of tea to sparkling water works well.
For special occasions, freeze small rosemary pieces and lemon zest in ice cubes to add visual appeal and enhanced flavor as they melt.
This recipe yields approximately 8 servings and can be easily doubled for larger gatherings.
