This light and refreshing drink combines the piney notes of gin with fresh rosemary and sparkling wine.
A simple syrup adds sweetness, while fresh lemon juice gives it a bright, citrusy kick.
Make the rosemary simple syrup: Mix water and sugar in a small saucepan.
Heat until the sugar dissolves. Add rosemary sprigs and simmer for 5 minutes.
Remove from heat and let cool. Strain and store in the fridge.
Fill a cocktail shaker with ice. Add gin, rosemary simple syrup, and lemon juice.
Shake for 15-20 seconds until well chilled.
Strain into a champagne flute or tall glass filled with ice.
Top with prosecco and stir gently.
Garnish with a fresh rosemary sprig.

Store extra rosemary simple syrup in an airtight container in the fridge for up to 2 weeks.The drink works well with both London Dry gin and botanical gins.For a non-alcoholic version, use juniper tea instead of gin and sparkling water instead of prosecco.Fresh lemon juice makes a big difference.
