  • Measuring cups and spoons
  • Small pitcher (optional)

Ingredients

  • 1 cup fresh raspberries
  • 1/2 cup fresh lemon juice about 4 lemons
  • 1/4 cup simple syrup
  • 2 cups sparkling water or club soda
  • Ice cubes
  • Fresh mint leaves for garnish
  • Extra raspberries for garnish
  • Lemon slices for garnish

Instructions

  • Place raspberries in the cocktail shaker or mason jar.
  • Muddle the raspberries until they release their juice and break down.
  • Add lemon juice and simple syrup to the muddled raspberries.
  • Fill the shaker halfway with ice cubes.
  • Close the shaker and shake for 15-20 seconds.
  • Strain the mixture through a fine-mesh strainer into tall glasses filled with ice.
  • Top each glass with sparkling water.
  • Garnish with fresh mint leaves, raspberries, and lemon slices.

Notes

The recipe makes 4 servings. Store any leftover raspberry-lemon mixture in the fridge for up to 2 days.
For a sweeter drink, add more simple syrup. For extra tartness, increase the lemon juice.
Make ahead tip: Prepare the raspberry-lemon mixture up to 24 hours in advance. Add sparkling water just before serving.
For a frozen version, blend the strained mixture with ice until slushy, then top with sparkling water.
