Ingredients

For one serving, prepare the following ingredients:

  • 6-8 fresh raspberries
  • 2 oz coconut rum
  • 1 oz coconut cream
  • 1 oz simple syrup
  • 1 oz fresh lime juice
  • Ice
  • Coconut water to top
  • Raspberry and lime slice for garnish

You can adjust the sweetness by adding more or less simple syrup. For a non-alcoholic version, replace the rum with extra coconut water.

Instructions

  • Add raspberries to the shaker and muddle gently.
  • Pour in coconut rum, coconut cream, simple syrup, and lime juice.
  • Fill the shaker with ice and shake well for 10-15 seconds.
  • Strain the mixture into a tall glass filled with ice.
  • Top with coconut water and stir gently.
  • Garnish with a fresh raspberry and lime slice.

Serve right away while cold and fresh. The drink may separate slightly, so give it a quick stir before sipping.

    This recipe can be easily scaled up for larger batches. Prepare the base mixture in advance and shake with ice just before serving.
    For a frozen version, blend all ingredients with 1 cup of ice until smooth. This creates a slushy texture perfect for hot days.
    Try using frozen raspberries if fresh ones aren't available. They'll help keep the drink cold and add a nice texture.
