Equipment

  • Cocktail shaker or mason jar with lid: I use this to mix the lychee syrup and lime juice well.
  • Strainer: Keeps any pulp or ice out of the finished drink.
  • Measuring jigger or tablespoon: For accurate ingredient amounts.
  • Tall glass or champagne flute: A flute emphasizes the bubbles, but any tall glass works.
  • Bar spoon: Useful for stirring but honestly, it’s optional.
  • Ice: I prefer cube ice for slow melting.

Ingredients

  • Prosecco: 150 ml about 5 oz, chilled
  • Canned lychees in syrup: 3 lychees plus 30 ml 2 tbsp syrup
  • Fresh lime juice: 20 ml 1.5 tbsp
  • Ice cubes: Enough to fill your glass
  • Mint leaves optional: For garnish
  • Lime wedge optional: For garnish
  • Sugar optional: If the lychee syrup isn’t sweet enough

Instructions

  • Place 3 lychees and syrup in a shaker or jar.
  • Add fresh lime juice.
  • Add a few cubes of ice.
  • Shake well to mix and chill.
  • Strain into a glass filled with ice.
  • Slowly pour in chilled Prosecco.
  • Gently stir if needed.
  • Garnish with mint leaves and a lime wedge if you want extra color.

Notes

If I want a stronger lychee flavor, I’ll use more syrup or muddle extra fruit in the shaker. Some Proseccos are sweeter than others—if mine is on the dry side, I’ll add a bit more syrup or a pinch of sugar.
Canned lychees are simple to use, but I’ll use fresh if I can find them. For a large batch, I just multiply the ingredients and mix everything except Prosecco ahead of time.
I add the Prosecco just before serving so the bubbles stay fresh. Mint and extra lime make a nice garnish, but honestly, they’re not required.
I always serve this cocktail cold for the best taste. Nobody likes a lukewarm spritz.
