  • Small saucepan
  • Fine-mesh strainer
  • Ice cube tray
  • Jigger or measuring cup

Ingredients

  • 2 cups pomegranate juice
  • 4 fresh rosemary sprigs
  • 1/2 cup simple syrup
  • 1 cup fresh lime juice
  • 4 cups sparkling water
  • Pomegranate seeds for garnish
  • Ice cubes
  • Fresh rosemary sprigs for garnish

Instructions

  • Make rosemary simple syrup: Heat 1/2 cup water and 1/2 cup sugar in a small saucepan until the sugar dissolves. Add 2 rosemary sprigs and let steep for 10 minutes. Then, strain and cool.
  • Fill a large pitcher with ice cubes.
  • Add pomegranate juice, lime juice, and cooled rosemary simple syrup to the pitcher. Stir well.
  • Pour in sparkling water just before serving. Then, stir gently to combine.
  • Fill glasses with ice and pour the mixture.
  • Garnish each glass with pomegranate seeds and a fresh rosemary sprig.

Notes

Store rosemary simple syrup in the fridge for up to 1 week.
For best results, add sparkling water right before serving to maintain carbonation.
You can make it sweeter or tarter by adjusting the amount of simple syrup and lime juice.
Replace regular ice cubes with frozen pomegranate seeds to prevent dilution.
