Equipment

  • Cocktail shaker or large jar with a lid
  • Measuring cups and spoons
  • Citrus juicer (manual or electric, for the lime)
  • Fine mesh strainer (if you want a smooth juice)
  • Tall glasses for serving
  • Long spoon for stirring.
  • Ice cube tray
  • Small plate (for rimming the glass with sugar, optional)

Ingredients

  • 1 cup pineapple juice
  • 1/2 cup cranberry juice unsweetened or lightly sweetened
  • 1/2 cup club soda or sparkling water
  • 1 tablespoon lime juice freshly squeezed
  • 1-2 teaspoons simple syrup or honey to taste
  • Ice cubes
  • Fresh pineapple slices lime wheels, or mint sprigs (for garnish)
  • Sugar or colored sugar for glass rim, optional

Instructions

  • Fill the cocktail shaker halfway with ice cubes.
  • Pour in the pineapple juice, cranberry juice, and lime juice.
  • Add simple syrup or honey; adjust sweetness as needed.
  • Shake well for 15-20 seconds.
  • Strain the mixture into a tall glass filled with fresh ice.
  • Top with club soda or sparkling water and stir gently.
  • If desired, rub a lime wedge on the rim of the glass and dip it in sugar before pouring in the drink.
  • Garnish with pineapple slices, lime wheels, or a mint sprig.

Notes

I always reach for fresh juices if I can—they just taste brighter and cleaner. If you’re in a rush, bottled is fine, but check the label for sneaky added sugars.
Want it sweeter or a little more tart? Just play with the amount of simple syrup or honey. Sometimes I’ll add a splash more club soda right before serving for extra fizz.
For a twist, edible flowers or funky-shaped ice cubes are fun touches. If you’re making this for a crowd, multiply the ingredients and mix everything except the club soda ahead of time in a pitcher.
Add the club soda right before serving so it doesn’t go flat.
