  • Jigger or measuring cup
  • Champagne flutes or tall glasses
  • Ice

Ingredients

For two servings, gather:

  • 4 oz 120 ml coconut cream
  • 4 oz 120 ml pineapple juice
  • 2 oz 60 ml white rum
  • 1 cup ice
  • 8 oz 240 ml chilled Prosecco
  • Pineapple wedges and maraschino cherries for garnish

Fresh pineapple juice tastes best, but canned works too. Choose a good quality coconut cream for the best flavor.

Instructions

  • Fill the cocktail shaker with ice.
  • Add coconut cream, pineapple juice, and rum to the shaker.
  • Shake well for 10-15 seconds to chill and mix the ingredients.
  • Strain the mixture into two champagne flutes or tall glasses filled with ice.
  • Top each glass with 4 oz (120 ml) of chilled Prosecco.
  • Stir gently to combine.
  • Garnish with pineapple wedges and maraschino cherries.

Serve right away to enjoy the bubbly Prosecco at its best.

    Notes

    For a frozen version, blend the coconut cream, pineapple juice, rum, and 1 cup of ice until smooth. Pour into glasses and top with Prosecco.
    You can adjust the sweetness by adding more or less pineapple juice. For a stronger drink, increase the rum.
    Non-alcoholic option: Skip the rum and Prosecco. Use coconut water and sparkling water instead for a virgin pineapple colada.
