Pineapple Prosecco Breeze Cocktail Recipe
This cocktail mixes pineapple juice and Prosecco for a bright, bubbly flavor. I find this drink easy to make and well-suited for gatherings or a quiet evening at home.

Equipment

  • Cocktail shaker (or a jar with a tight lid if a shaker isn’t available)
  • Jigger or liquid measuring cup
  • Fine-mesh strainer
  • Spoon: For stirring.
  • Champagne flute or wine glass
  • Small knife and cutting board for garnishes
  • Ice cubes
  • Citrus zester (optional, for zesting lime)

Ingredients

  • 3 ounces chilled pineapple juice
  • 4 ounces chilled Prosecco
  • 1/2 ounce freshly squeezed lime juice
  • 1/2 ounce simple syrup adjust for desired sweetness
  • Ice cubes
  • Pineapple slice or wedge for garnish
  • Mint sprig for garnish
  • Lime wheel optional for garnish

Instructions

  • Fill a cocktail shaker with ice cubes.
  • Pour in pineapple juice, lime juice, and simple syrup.
  • Secure the lid and shake vigorously for about 15 seconds.
  • Strain the mixture into a chilled flute or wine glass.
  • Slowly top with Prosecco to preserve the bubbles.
  • Gently stir once to mix, taking care not to lose carbonation.
  • Garnish with a pineapple wedge, mint sprig, and, if desired, a lime wheel.

Notes

You can adjust the sweetness by varying the amount of simple syrup. If I want the drink less sweet, I use less syrup or none at all.
Chilling all the ingredients before mixing keeps the cocktail cold without needing too much ice. Too much ice just waters it down, and who wants that?
For a stronger pineapple kick, muddle a few pineapple chunks with the syrup before shaking. Sparkling water can be swapped in for Prosecco if someone wants a nonalcoholic version.
I prefer to garnish right before serving to keep the fruit slices and mint looking fresh. Using ripe pineapple gives both better flavor and a nicer garnish, in my opinion.
