This cocktail mixes pineapple juice and Prosecco for a bright, bubbly flavor. I find this drink easy to make and well-suited for gatherings or a quiet evening at home.

Notes
You can adjust the sweetness by varying the amount of simple syrup. If I want the drink less sweet, I use less syrup or none at all.Chilling all the ingredients before mixing keeps the cocktail cold without needing too much ice. Too much ice just waters it down, and who wants that? For a stronger pineapple kick, muddle a few pineapple chunks with the syrup before shaking. Sparkling water can be swapped in for Prosecco if someone wants a nonalcoholic version.I prefer to garnish right before serving to keep the fruit slices and mint looking fresh. Using ripe pineapple gives both better flavor and a nicer garnish, in my opinion.
