  • Cocktail shaker
  • Muddler
  • Fine-mesh strainer
  • Champagne flute or tall glass
  • Ice cube tray
  • Small knife and cutting board
  • Measuring jigger or shot glass

Ingredients

  • 2 oz fresh pineapple juice
  • 4-5 fresh mint leaves
  • 1 oz simple syrup
  • 3 oz prosecco or sparkling wine
  • Club soda to top
  • Ice cubes

For garnish: pineapple wedge and mint sprig

Instructions

  • Place mint leaves in the cocktail shaker and gently muddle them.
  • Add pineapple juice and simple syrup to the shaker.
  • Fill the shaker with ice and shake for 10-15 seconds until well chilled.
  • Strain the mixture into a champagne flute or tall glass filled with ice.
  • Pour in the prosecco slowly to maintain bubbles.
  • Top with a splash of club soda.
  • Garnish with a pineapple wedge and fresh mint sprig.

Notes

Store fresh pineapple juice in the fridge for up to 3 days.
Make simple syrup by heating equal parts sugar and water until dissolved, then cool before use.
For best results, chill all ingredients before mixing.
Replace prosecco with sparkling water for a non-alcoholic version.
