Ingredients

For one cocktail, gather:

  • 2 oz white rum
  • 1 oz fresh lime juice
  • 1 oz simple syrup
  • 1 oz pineapple juice
  • 1 oz mango puree
  • 8-10 fresh mint leaves
  • Club soda
  • Ice cubes
  • Pineapple wedge and mint sprig for garnish

Fresh ingredients are key. Use ripe mangoes for the puree and freshly squeezed lime juice for the best taste.

Instructions

  • Add mint leaves to the shaker and muddle gently.
  • Pour in rum, lime juice, simple syrup, pineapple juice, and mango puree.
  • Fill the shaker with ice and shake for 10-15 seconds.
  • Strain into a highball glass filled with ice.
  • Top with club soda and stir lightly.
  • Garnish with a pineapple wedge and mint sprig.

You can adjust the sweetness by adding more or less simple syrup. For a stronger drink, add an extra half ounce of rum.

    This recipe works well for batches. Simply multiply the ingredients by the number of servings needed. Also, prep the fruit juices and puree ahead of time for quicker serving.
    For a non-alcoholic version, replace the rum with extra pineapple juice or coconut water. The drink stays tasty and tropical without the alcohol.
    Try different fruit combinations. Strawberry or passion fruit can replace mango for a twist on the flavor. Experiment to find your favorite mix.
