Ingredients

  • 2 cups fresh pineapple chunks or canned in natural juice
  • 1/2 cup freshly squeezed lemon juice about 4-5 lemons
  • 3 tablespoons honey or simple syrup
  • 2 cups soda water or sparkling water
  • 1 cup ice cubes
  • Mint leaves for garnish
  • Lemon slices for garnish
  • Pineapple wedges for garnish

The quality of ingredients matters in this recipe. Fresh pineapple provides the best flavor, but canned works well too.

Instructions

  • Add pineapple chunks to a blender and blend until smooth.
  • Pour the pineapple puree through a fine mesh strainer into a pitcher to remove excess pulp.
  • Add freshly squeezed lemon juice and honey to the strained pineapple puree.
  • Stir well until the honey dissolves completely.
  • Fill tall glasses with ice cubes.
  • Pour the pineapple-lemon mixture over ice, filling the glass about 2/3 full.
  • Top each glass with soda water and stir gently to mix.
  • Garnish with mint leaves, lemon slices, and pineapple wedges.
  • Serve immediately while cold and bubbly.

Notes

This mocktail can be prepared in advance by mixing the pineapple puree and lemon juice ahead of time. Just add the soda water right before serving to maintain the fizz.
For a frozen version, blend all ingredients except soda water with extra ice for a slushie texture. Then pour into glasses and top with a splash of soda water.
Kids love this drink! For a child-friendly version, reduce the lemon juice to 1/4 cup and increase the honey to 4 tablespoons for a sweeter taste.
Try freezing pineapple chunks to use instead of ice cubes to prevent dilution as they melt.
