  • Cocktail shaker
  • Measuring cups/jiggers

  • Highball glasses
  • Ice maker or ice tray
  • Strainer

Ingredients

  • 4 oz fresh pineapple juice
  • 1 oz ginger syrup
  • 2 oz lime juice
  • Club soda to top
  • Ice cubes
  • Fresh pineapple wedges for garnish
  • Fresh mint leaves for garnish
  • Crystallized ginger pieces optional

Instructions

  • Fill the cocktail shaker halfway with ice cubes.
  • Pour pineapple juice, ginger syrup, and lime juice into the shaker.
  • Shake well for 15-20 seconds until the mixture is very cold.
  • Fill a highball glass with fresh ice cubes.
  • Strain the mixture into the glass.
  • Top with club soda and stir gently.
  • Garnish with pineapple wedges, mint leaves, and crystallized ginger if desired.

Notes

Store extra ginger syrup in an airtight container in the fridge for up to 2 weeks.
For best results, use fresh pineapple juice instead of canned.
Make it spicier by adding more ginger syrup or muddling fresh ginger in the shaker.
This recipe makes one serving. Double or triple ingredients to serve more people.
