  • Cocktail shaker
  • Ice
  • Measuring cups/spoons

Ingredients

  • 4 oz pineapple juice fresh or store-bought
  • 2 oz coconut milk
  • 1 oz lime juice
  • 1/2 oz simple syrup
  • Club soda to top
  • Ice cubes
  • Fresh pineapple wedge for garnish
  • Fresh mint leaves for garnish

Instructions

  • Fill the cocktail shaker halfway with ice.
  • Add pineapple juice, coconut milk, lime juice, and simple syrup to the shaker.
  • Shake vigorously for 15-20 seconds until well chilled.
  • Fill a tall glass with fresh ice cubes.
  • Strain the mixture into the glass.
  • Top with club soda (about 2-3 oz).
  • Stir gently with a spoon to combine.
  • Garnish with a pineapple wedge and mint leaves.

Notes

The mocktail can be made ahead and stored in the fridge for up to 24 hours without the club soda.
Use full-fat coconut milk for the creamiest texture. Light coconut milk may separate.
Fresh pineapple juice makes the best flavor, but good quality store-bought works too.
Make simple syrup by mixing equal parts sugar and hot water until dissolved.
Double or triple the recipe to serve a crowd.
