Equipment

  • Cocktail shaker
  • Muddler
  • Jigger or measuring cup
  • Strainer
  • Collins glass or tall glass
  • Ice

Ingredients

Here's what you'll need to make one Pineapple Coconut Rum Smash:

  • 2 oz white rum
  • 1 oz coconut cream
  • 2 oz pineapple juice
  • 1/4 cup fresh pineapple chunks
  • 1/2 oz simple syrup
  • Ice
  • Pineapple wedge and maraschino cherry for garnish optional

Use fresh pineapple juice if possible for the best flavor.

Instructions

Follow these steps to make the cocktail:

  • Add pineapple chunks and simple syrup to the shaker. Muddle well.
  • Pour in rum, coconut cream, and pineapple juice.
  • Fill the shaker with ice.
  • Shake vigorously for 10-15 seconds.
  • Fill a Collins glass with ice.
  • Strain the mixture into the glass.
  • Garnish with a pineapple wedge and cherry if desired.

Adjust the sweetness by adding more or less simple syrup. For a stronger drink, add an extra 1/2 oz of rum.

    Notes

This recipe makes one serving. To make a pitcher for a party, multiply the ingredients by the number of servings needed. Prepare the mixture in a large pitcher or bowl instead of a shaker.
For a non-alcoholic version, replace the rum with extra pineapple juice or coconut water.
You can also blend the ingredients with ice for a frozen version of this drink.
Store any leftover pineapple juice in the fridge and use within 3-5 days for the best taste.
