  • 2 cups ice cubes

  • ½ cup granulated sugar
  • ½ cup water

Instructions

  • Make simple syrup (if not using store-bought): Combine equal parts sugar and water in a small saucepan. Heat until sugar dissolves completely. Cool before using.
  • Prepare your glass: Fill highball glasses with ice cubes.
  • Mix the base: In a cocktail shaker, combine pineapple juice, coconut cream, lime juice, and simple syrup.
  • Shake well: Add a few ice cubes to the shaker and shake vigorously for 15-20 seconds until the mixture is well-chilled.
  • Strain and serve: Strain the mixture into the prepared glasses, filling them about ¾ full.
  • Add fizz: Top each glass with club soda or sparkling water. Stir gently to combine.
  • Garnish: Add a pineapple wedge and a few mint leaves to each glass.

This mocktail is best served immediately while still fizzy and cold.
