This refreshing cocktail combines sweet peach puree with sparkling rosé wine for a perfect brunch drink.
The recipe takes just 5 minutes to prepare and serves 4 people.
Place chopped peaches, lemon juice, and sugar in a blender. Blend until smooth, about 30 seconds.
Strain the peach mixture through a fine mesh strainer to remove any pulp. This creates a smooth puree.
Add 2 tablespoons of peach puree to each champagne flute.
Slowly pour the chilled sparkling rosé into each glass, filling about 3/4 full.
Stir gently with a small spoon to combine the puree and wine.
Garnish each glass with a fresh peach slice.

Store extra peach puree in an airtight container in the fridge for up to 2 days.Make this drink alcohol-free by replacing the rosé with sparkling water or non-alcoholic sparkling wine.Frozen peaches work well when fresh ones aren't in season.
