Ingredients

  • 2 ripe peaches pitted and chopped
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon sugar
  • 1 bottle 750ml chilled sparkling rosé wine
  • Fresh peach slices for garnish

Instructions

  • Place chopped peaches, lemon juice, and sugar in a blender. Blend until smooth, about 30 seconds.
  • Strain the peach mixture through a fine mesh strainer to remove any pulp. This creates a smooth puree.
  • Add 2 tablespoons of peach puree to each champagne flute.
  • Slowly pour the chilled sparkling rosé into each glass, filling about 3/4 full.
  • Stir gently with a small spoon to combine the puree and wine.
  • Garnish each glass with a fresh peach slice.

Notes

Store extra peach puree in an airtight container in the fridge for up to 2 days.
Make this drink alcohol-free by replacing the rosé with sparkling water or non-alcoholic sparkling wine.
Frozen peaches work well when fresh ones aren't in season. Thaw them completely before blending.
The best rosé for this recipe is dry or semi-dry. Sweet varieties might make the drink too sugary.
