Ingredients

  • 2 ripe peaches pitted and sliced
  • 1 cup fresh raspberries
  • 1 tablespoon sugar
  • 1 bottle prosecco or champagne chilled
  • Fresh peach slices and raspberries for garnish

The fruit should be ripe and sweet for the best flavor. Fresh fruit works better than frozen for this recipe.

Instructions

  • Place peaches, raspberries, and sugar in a blender.
  • Blend until completely smooth, about 30-45 seconds.
  • Strain the puree through a fine-mesh strainer to remove seeds and pulp.
  • Fill each champagne flute 1/4 full with the fruit puree.
  • Slowly pour chilled prosecco into each glass, stirring gently to combine.
  • Garnish with fresh fruit and serve right away.

Notes

The fruit puree can be made up to 24 hours ahead and stored in the fridge.
Keep the prosecco very cold for the best bubbles. Warm sparkling wine goes flat quickly.
Make a non-alcoholic version by using sparkling apple cider or sparkling water instead of prosecco.
One batch makes about 6-8 servings. Double the recipe for larger parties.
