Place peach slices and mint leaves in the julep cup.
Add simple syrup and muddle gently to release the mint oils and peach juice.
Pour in the bourbon. Fill the cup halfway with crushed ice.
Stir with a bar spoon for 15-20 seconds to chill and combine ingredients.
Add more crushed ice to create a mounded top.
Garnish with a fresh peach slice and mint sprig.
