Add water and dried lavender to a small saucepan. Bring to a boil, then reduce heat and simmer for 5 minutes.
Remove from heat and strain the lavender syrup. Then, stir in honey until dissolved. Let cool completely.
Next, blend peach slices until smooth. Strain through a fine mesh strainer to remove pulp.
In a large pitcher, mix the peach puree with the lavender syrup.
After that, add sparkling water and stir gently to combine.
Fill glasses with ice cubes. Then, pour the mixture into each glass.
Finally, garnish with fresh lavender sprigs and peach slices.
