This refreshing cocktail combines sweet peaches with smooth bourbon for a perfect summer drink. The recipe is simple to make and requires only a few ingredients.
Add peach slices (or preserves) to the cocktail shaker.
Add mint leaves and simple syrup.
Muddle gently to release the peach juice and mint oils.
Pour in bourbon and lemon juice.
Fill the shaker with ice and shake for 15-20 seconds.
Strain into a rocks glass filled with fresh ice.
Top with a splash of club soda if desired.
Garnish with a mint sprig and peach slice.
Notes
This recipe can be easily doubled or tripled for a small gathering. Prep the peach and mint mix ahead, but wait to add bourbon and ice until just before serving. For a non-alcoholic version, swap bourbon for cold black tea and add a dash of vanilla extract. It’s surprisingly close in flavor, minus the booze. The drink pairs well with grilled foods, especially pork and chicken. I think it also makes a nice pre-dinner cocktail during warm months. For best results, use peaches at their peak ripeness. They should give a little when pressed and smell fragrant—too firm and they're underripe, too soft and they're past their prime.
