This red, white, and blue layered pina colada puts a festive twist on the classic tropical drink. It’s spot-on for Fourth of July celebrations or any patriotic holiday, really.

Equipment

  • Tall hurricane or parfait glasses
  • Measuring cups and spoons
  • Ice cube trays
  • Cocktail spoons for layering
  • Straws (preferably wide)
  • Small pitchers for each colored layer

Ingredients

Base Ingredients (for all layers):

  • 1 cup ice cubes
  • 1 cup cream of coconut
  • 1 cup pineapple juice
  • 1/2 cup white rum

For Red Layer:

  • 1/4 cup strawberries or raspberries
  • 1 tbsp grenadine syrup

For White Layer:

  • No additional ingredients uses base recipe

For Blue Layer:

  • 1 tbsp blue curaçao
  • OR 2-3 drops blue food coloring

Garnishes:

  • Fresh pineapple wedges
  • Maraschino cherries
  • Small American flags on toothpicks
  • Whipped cream optional

Instructions

  • Prepare the White Layer: In a blender, combine 1/3 of your base ingredients (ice, cream of coconut, pineapple juice, and rum if using). Blend until smooth.
  • Pour into a small pitcher and set aside.
  • Make the Blue Layer: Clean the blender. Add another 1/3 of your base ingredients plus blue curaçao or food coloring.
  • Blend until smooth, then pour into a separate pitcher.
  • Create the Red Layer: Clean the blender again. Add the final 1/3 of base ingredients plus strawberries and grenadine.
  • Blend until smooth and transfer to a third pitcher.
  • Assemble the Drink: Start by pouring the red layer into glasses, filling about 1/3 of each glass.
  • Place in freezer for 5 minutes to set slightly.
  • Add White Layer: Using the back of a spoon, slowly pour the white mixture over the red layer.
  • The spoon helps prevent the layers from mixing. Return to freezer for another 5 minutes.
  • Finish with Blue Layer: Carefully add the blue layer using the spoon technique again.
  • Garnish: Top with whipped cream, a cherry, pineapple wedge, and a small flag if you’re feeling extra festive.

Notes

This recipe makes about 4-6 servings, depending on your glass size. For a non-alcoholic version, just skip the rum and blue curaçao (use food coloring instead).
The drinks are best served immediately since the layers will eventually mix together. If you want it thicker, toss in more ice or even frozen pineapple chunks.
Pre-chill all your ingredients for best results. The layers work because of different densities—the red layer is heaviest, blue is lightest.
If you’re short on time, you can skip the freezing between layers, but pour very slowly over the back of a spoon to keep the colors separate.
