  • Tall glasses (highball or collins glasses work best)
  • Measuring jigger or tablespoon
  • Cocktail shaker (optional)

  • Bar spoon: For mixing.
  • Ice cube tray for fresh ice
  • Citrus juicer or reamer

Ingredients

For 2 servings:

  • Fresh mint leaves 20-24 leaves
  • Fresh lime 2 whole limes
  • Passionfruit pulp 4 tablespoons about 2 passionfruits
  • Simple syrup 2 ounces 4 tablespoons
  • Club soda 8 ounces
  • Ice cubes 2 cups
  • Lime wheels 2 for garnish
  • Mint sprigs 2 for garnish

For a sweeter drink, add an extra tablespoon of simple syrup.

Instructions

  • Prepare the glass: Fill two highball glasses with ice cubes.
  • Muddle the mint: Place 10-12 mint leaves in each glass. Gently muddle to release the mint oils without shredding the leaves.
  • Add the citrus: Squeeze the juice of one lime into each glass (about 1 ounce per glass).
  • Add passionfruit: Spoon 2 tablespoons of passionfruit pulp into each glass. If using whole passionfruits, scoop out the pulp with seeds.
  • Add sweetener: Pour 1 ounce (2 tablespoons) of simple syrup into each glass.
  • Mix and top: Stir the mixture with a bar spoon. Top with 4 ounces of club soda per glass.
  • Garnish: Add a lime wheel and fresh mint sprig to each glass.
  • Serve immediately while the drink is cold and the carbonation is fresh.

Notes

This mocktail can be customized in several ways.
For a smoother texture, strain the passionfruit to remove seeds before adding.
Prep ingredients ahead of time if serving at a party.
Mix the mint, lime, passionfruit, and simple syrup in a pitcher, then add ice and club soda when guests arrive.
For a frozen version, blend all ingredients except club soda with 1 cup of ice until smooth. Pour into glasses and top with club soda.
Store leftover simple syrup in the refrigerator for up to two weeks in an airtight container. Fresh passionfruit pulp can be frozen in ice cube trays for future use.
Children particularly enjoy this mocktail, especially when served with colorful straws and extra garnishes.
