Ingredients

For 2 servings:

  • 4 passion fruits pulp scooped out
  • 2 oz 60ml fresh lime juice (about 2 limes)
  • 2 oz 60ml fresh orange juice (about 1 medium orange)
  • 1 oz 30ml simple syrup
  • 4 oz 120ml soda water or sparkling water
  • Ice cubes
  • Mint leaves for garnish
  • Orange or lime slices for garnish

The key to this mocktail is using fresh fruit juices rather than bottled versions.

Instructions

  • Cut the passion fruits in half and scoop the pulp into a strainer set over a bowl. Press with a spoon to extract the juice, separating it from the seeds.
  • In a cocktail shaker, combine the passion fruit juice, lime juice, orange juice, and simple syrup.
  • Add a handful of ice to the shaker and shake vigorously for 15-20 seconds until well-chilled.
  • Strain the mixture into two highball glasses filled with fresh ice.
  • Top each glass with 2 oz of soda water and stir gently to combine.
  • Garnish with mint leaves and citrus slices before serving.

For a smoother texture, you can blend the passion fruit pulp (seeds included) with the other juices and strain afterward. This releases more flavor from the seeds.

    Notes

    This mocktail can be prepared in advance up to the soda water step.
    Store the mixed juices in the refrigerator for up to 24 hours, then add ice and soda water just before serving.
    For a sweeter drink, increase the simple syrup to 1.5 oz. For a more tart version, reduce to 0.5 oz or omit entirely.
    Frozen passion fruit pulp can substitute fresh fruit if needed. Thaw completely before using.
    Try adding a splash of coconut water for a tropical twist, or muddle in some fresh berries for added flavor and color.
    The recipe can easily be doubled or tripled for serving at parties.
    Consider preparing a batch of the juice mixture and letting guests add their own soda water and garnishes.
