Cut both melons into 1-inch cubes or use a melon baller to create small spheres.
Add the melon pieces to the pitcher.
Pour the white wine over the melon.
Add honey and stir until mixed.
Tear mint leaves and add them to the pitcher.
Let the mixture chill in the refrigerator for 2-4 hours.
Just before serving, add club soda and stir gently.
Fill wine glasses with ice and pour the sangria.
Garnish each glass with fresh mint sprigs.
