Place mango chunks in a blender and blend until smooth. Strain if desired for a smoother texture.
In a cocktail shaker or large glass, muddle the mint leaves gently to release their oils.
Add the mango puree, lime juice, and honey to the muddled mint. Stir well to combine.
Add cold water and mix thoroughly.
Fill serving glasses with ice cubes, then pour the mango-mint mixture over the ice, filling glasses about 2/3 full.
Top each glass with sparkling water and stir gently.
Garnish with fresh mint leaves and lime slices before serving.
The drink can be prepared in advance up to step 5 and refrigerated for up to 24 hours.
