Ingredients

  • 2 ripe mangoes peeled and cubed
  • 1 cup fresh ginger juice
  • 1/2 cup lime juice
  • 1/4 cup honey or agave syrup
  • Club soda
  • Ice cubes
  • Mint leaves for garnish
  • Lime wedges for garnish

Instructions

  • Add mango chunks, ginger juice, lime juice, and honey to the blender. Blend until smooth.
  • Strain the mixture through a fine-mesh strainer into a pitcher. This removes any pulp or fibers.
  • Fill tall glasses with ice cubes. Pour the mango-ginger mixture until glasses are 3/4 full.
  • Top each glass with club soda and stir gently to combine.
  • Garnish with fresh mint leaves and lime wedges.

Notes

Store any leftover mixture in an airtight container in the fridge for up to 2 days.
For a sweeter drink, add more honey or agave syrup to taste.
Fresh ginger works best, but store-bought ginger juice can work as a substitute.
Choose mangoes that are slightly soft when squeezed for the best flavor.
