Ingredients

Here's what you'll need to make 4 servings:

  • 2 cups lychee juice
  • 1/4 cup rose syrup
  • 1 cup fresh lychees peeled and pitted
  • 1 lime thinly sliced
  • 1 cup fresh strawberries sliced
  • 2 cups sparkling water
  • Ice cubes
  • Fresh mint leaves for garnish optional

You can find lychee juice and rose syrup at many grocery stores or Asian markets. If fresh lychees aren't available, canned ones will work too.

Instructions

  • In the pitcher, mix the lychee juice and rose syrup.
  • Add the fresh lychees, lime slices, and strawberries.
  • Stir gently to combine.
  • Refrigerate for at least 1 hour to let the flavors blend.
  • Just before serving, add the sparkling water and stir lightly.
  • Fill glasses with ice and pour the mocktail over.
  • Garnish with mint leaves if desired.

This recipe is quick to prepare. The chilling time lets the fruit flavors infuse into the drink. Add the sparkling water at the end to keep it fizzy.

    Notes

    You can adjust the sweetness by adding more or less rose syrup. For a stronger lychee flavor, use more lychee juice and less sparkling water.
    Make this mocktail up to a day ahead, but don't add the sparkling water until serving time. Keep it cold in the fridge.
    For a pretty look, freeze some lychees and use them as ice cubes. They'll keep your drink cool without watering it down.
    If you want to make this into an alcoholic sangria, replace the sparkling water with white wine or champagne.
