  • Cocktail shaker
  • Muddler or spoon
  • Jigger or measuring cup
  • Tall glass
  • Strainer
  • Ice

Ingredients

For one cocktail:

  • 2 oz lychee juice
  • 1 oz vodka
  • 5-6 fresh raspberries
  • 1/2 oz simple syrup
  • 3-4 oz club soda
  • Ice
  • Lychee fruit and raspberry for garnish optional

Use canned lychee juice if fresh isn't available. Pick ripe, plump raspberries for the best flavor.

Instructions

  • Put raspberries and simple syrup in the shaker. Muddle gently to break up the berries.
  • Add lychee juice, vodka, and ice to the shaker. Close tightly and shake for 10-15 seconds.
  • Fill a tall glass with ice. Strain the mixture into the glass.
  • Top with club soda and stir gently.
  • Garnish with a lychee fruit and raspberry on a cocktail pick if desired.
  • Serve right away while cold and bubbly. The drink will turn a pretty pink color from the raspberries.

Notes

This recipe is easy to adjust. For a stronger drink, add more vodka. For less alcohol, use more lychee juice instead.
Try different berries like strawberries or blackberries for variety.
Make a big batch for parties by multiplying the recipe. Mix everything except the soda in a pitcher. Add ice and soda to each glass when serving.
For a non-alcoholic version, skip the vodka and use more lychee juice or soda water. It's just as tasty and fun for all ages.
