  • Cocktail shaker or large mason jar
  • Muddler or wooden spoon
  • Fine-mesh strainer
  • Tall serving glasses
  • Ice cube tray
  • Measuring cups and spoons
  • Knife and cutting board

Ingredients

  • 8 fresh or canned lychees peeled and pitted
  • 12 fresh mint leaves plus extra for garnish
  • 2 tablespoons simple syrup
  • 1 cup lychee juice from can or store-bought
  • 2 cups club soda
  • 1 cup crushed ice
  • 2 limes cut into wedges
  • Optional: 4-6 lychees on bamboo skewers for garnish

Instructions

  • Add mint leaves and simple syrup to the shaker. Muddle gently to release oils.
  • Add lychees to the shaker and muddle until broken down but not completely crushed.
  • Pour in lychee juice and fill shaker with ice cubes.
  • Next, shake the mixture vigorously for 15-20 seconds until well chilled.
  • Strain the mixture into tall glasses filled with crushed ice.
  • Top each glass with club soda and stir gently.
  • Finally, garnish with fresh mint sprigs, lime wedges, and skewered lychees.

Notes

Store leftover lychee juice in an airtight container in the fridge for up to 3 days.
Fresh lychees make the best drink, but canned ones work well too.
For a sweeter drink, add an extra tablespoon of simple syrup.
Make sure to muddle mint leaves gently to avoid bitter flavors.
Replace club soda with sprite or ginger ale for extra sweetness.
